For the last few years, I’ve been told to get more protein in my diet. I’m pretty good about eating chicken—I love chicken. And I always have Chomps in my bag for a little zest.

But during my endless midnight doom scrolls, I collect screenshots of recipes I rarely (ok, almost never) make. That dude who does “Does it fuck or suck” is pretty intense, but he lives rent free in my screenshot heart.

Somewhere between a 2 a.m. menopiss break and Candy Crush, I stumbled across a high-protein recipe that you can make ahead. Over the last few weeks, I’ve been testing it, tweaking it, and finally got it to a place I’m comfortable sharing. Even better? You probably have all the ingredients sitting around—and they’re customizable in case your produce is on its last leg.

Because seriously, how many times do you have a brown banana and don’t want the caloric bomb of banana bread? Ok, banana bread is really f*cking good, especially with a cream cheese swirl, but that’s not where I’m going with this.

Why Blueberry Cottage Cheese Muffins?

  • They’re the perfect breakfast, snack, or late-night sweet craving.

  • They’re packed with protein (and yes, we need that).

  • You can make them ahead for grab-and-go mornings.

  • Hot or cold, they’re still delicious.

Tips for Making Blueberry Cottage Cheese Muffins

  • Measure with your heart. You can’t f*ck this up.

  • Upgrade your muffin tins. Seriously, invest in silicone muffin pans. Stop scrubbing baked-on mess—it’s a pain in the ass and you don’t have time for that.

  • Skip the Nutribullet. Please. This is blender territory. Old school just works better.

Blueberry Cottage Cheese Muffins Recipe

Ingredients:

  • 1 banana (the one you were about to throw away)

  • 1 cup blueberries (raspberries, blackberries, or diced peaches work too)

  • 1 ½ cups cottage cheese

  • 1 cup rolled oats

  • 1 cup Greek yogurt

  • 4 eggs

  • 1 teaspoon baking soda

  • ⅓ cup sugar-free maple syrup (plus a little extra for topping)

  • Cinnamon (if you’re feeling spicy)

  • Vanilla (just a dash)

Directions:

  1. Preheat oven to 350°F and spray your muffin pan.
  2. Toss everything except blueberries into the blender and let her rip.
  3. Fill muffin tins a little over halfway (makes 12 perfect muffins, unless you give your husband the runt).
  4. Top each muffin with blueberries.
  5. Optional: drizzle with maple syrup or sprinkle Truvia on top if you’re a sweet psycho like me.
  6. Bake for about 35 minutes.
  7. Pop them out easily from your silicone muffin tins.
  8. Try not to eat four in one sitting. (Good luck.)
